Lion’s Den were launched by Ollie and Lauren, who have won awards for sustainability and organic food at their pub, and two published cookbooks on Sustainability.

They realised that since becoming plant-based one of the key flavours they missed was Umami - the taste of savouriness or richness - so they were inspired to create tasty sauces that pack an umami punch to your dishes. 

Exotic mushrooms, especially Shiitake, have loads of umami qualities. Umami is the 5th taste sense, known as savouriness, that gives certain foods a deep rich flavour that makes us crave for more.

Mushrooms are a brilliant source of Protein, Vitamin D, Fibre and other minerals and vital vitamins. We’re also looking into the exciting potential between umami and protein absorption.
